Smoked
Duck with Blackcurrant Sauce
Whole
duck breast sliced in thickish (5mm) slices. Heat
duck in oven at 100 degrees C. Whilst heating
duck. Put dry red wine in sauce pan with brown
sugar to taste, dissolve sugar, then add a 100mm
of frozen or fresh blackcurrants. Bring to the
boil then crush fruit in sauce, reserve. Boil
small new potatoes, drain and add olive oil, brown
potatoes. Cook broccoli florets. Place warmed
duck breast on plate, cover with blackcurrant
sauce and serve with potatoes and broccoli. Try
a Gewurstraminer wine with this meal.
