Fish
Hand sliced superior smoked salmon, or a sweet
cured boneless portion of prime
salmon fillet known as Darnes, which when lightly cooked will
surprise you with both the quality of the product
and its versatility. Lightly cured smoked
cod and haddock are as well appreciated as our hand
produced kippers.
Smoked
Roasted Salmon/Hot Smoked Salmon
A boneless fillet portion of fresh
salmon, is
cured then air-dried before it is cooked in oak
smoke. Very versatile, it can be served hot or
cold with pasta, rice, salads as a starter or
main course or as it is, a splendid fish. The
preparation ensures that each portion is cooked
as a sealed portion, thereby retaining more moisture
and healthy oils.
Kippers
Quality,
plump herring are hand split then cured. The cured
herring are air-dried before being smoked in oak
smoke. The method produces a superbly flavoured
kipper without the use of any dyes or artificial
additives. A good old fashioned product made with
the best fish, as it should be.
Smoked
Salmon
Prepared by hand, the best Scottish salmon is
cured, air-dried, then carefully smoked in oak
smoke. Packed in 100gms to 500gms. Simply produced
as all good foods are.
Hot
Smoked Trout
Fresh whole trout, hand prepared, cured then cooked
in oak smoke. The smoking enhances the fine flavour
of the trout. Often served as a cold dish, it
can also be warmed.
Game & Poultry
Hot Smoked duck breast, sliced or whole, offers
a treat that is as quick to serve as any meal
yet will grace that special dinner party. Our
Oak Smoked Venison has a superb texture and full
flavour.

Ranging
from locally produced sirloin
of beef to Oak
Smoked gammons superb for parties and buffets. We also
offer a range of Dry
Cured smoked bacon and smoked
pork sausage.
Traditional
Dry Cured Bacon
A Dry Cured bacon, No water added, in fact the
moisture content is reduced. This bacon cooks
cleanly without any unpleasant residue, a nice
clear fat. The bacon is not too salty, it is available
as Oak Smoked or Unsmoked.
Smoked
Gammon
A Sweet Cure gammon air-dried then smoked with
oak smoke. This gammon does not require soaking
before cooking.
We
could go on, it is suffice to say all of our products
are to the same high standard. All products are
suitable for freezing.
Freshly packed for your convenience. Our products
are available in whatever portion sizes are
required.
